I don’t know about you but I am always on the hunt for a new favorite chili recipe. Fall is my favorite season, and there’s something so comforting about the cool weather, changing leaves, football on the t.v., and a big pot of a great chili on the stove. This smoky white bean chicken chili did not disappoint. 

 While I love all chilis, I especially crave a great chicken white bean chili. I stumbled upon this smoky white bean chili and just kept going back for more. It’s dairy-free, calls for fairly minimal ingredients (most of which I typically have on hand), and requires very little prep/cook time. Our family loves to have chili and drinks on Halloween prior to taking the kiddos out to trick or treat, and this was a fan favorite this year. 

Alright, time for the recipe, because I hate when recipe blogs force you to read 30 minutes of writing before you get to the good stuff. And this is really good stuff. If you want to see the full recipe, check out the original blog. Now, with no further ado, my new favorite white bean chicken chili recipe! 

 

Ingredients:

 *1 Rotisserie Chicken (or roast your own), shredded or diced

 *4 slices of bacon (but I added a lot more!)

*28oz diced tomatoes (I opted for fire-roasted)

*4 14oz cans of Geat Northern White Beans

*1 yellow onion, diced

*2 4oz cans of diced green chilis

*6 cup chicken stock or broth

*3 cloves garlic

*1 teaspoon smoky paprika

*1 teaspoon cumin

*1 teaspoon onion powder

*½ teaspoon garlic powder

*½ teaspoon chipotle chile powder or regular chile powder

*Toppings of your choice such as cheese and cilantro

 

Directions: 

-Cook bacon in a dutch oven or large pot. Once bacon starts to crisp and render fat, add onion and garlic. Stir mixture and cook over medium-low heat for about 20 minutes until onions are translucent and starting to caramelize.

-Add the chicken and all seasonings. Stir and cook for an additional 10 minutes to flavor chicken.

-Add in the stock, diced tomatoes, beans and green chilis. Add salt and pepper to taste.

-Bring to a slow boil and cook, uncovered, until liquid has reduced to your liking.

-Serve. Add any toppings you love and enjoy!
